The Pullman

The Pullman is a fine dining restaurant housed in two original carriages of the Orient Express. Our tasting menu offers a marriage of classic cuisine with the bounty of Ireland’s evolving terroir, emphasizing on the changing of the seasons and our close relationships with local food purveyors.

At its heart, The Pullman showcases time-honored traditions in an elevated-yet-approachable space where food, drink and atmosphere combine for a transportive dining experience.

Led by Head Chef Angelo Vagiotis, who brings global experience from fine dining establishments, including Noma in Copenhagen and Manresa in California, the team is dedicated to ingredient-driven cooking, classic techniques, and locally sourced produce, aiming to craft a culinary experience that evokes a “sense of place.” Chef Vagiotis most recently served as the inaugural head chef at Terre Restaurant, Castlemartyr Resort, where he led the restaurant to achieve “Hotel Restaurant of the Year” and two Michelin Stars within just 18 months of opening.

The Train

From the Orient Express to Pullman 2025
The Pullman at Glenlo Abbey offers a truly unique dining experience with two carriages, including Leona from 1927, part of the original Orient Express. Leona travelled the Orient Express route, covering destinations like Istanbul, Monte Carlo-Nice, and St. Petersburg. It was also part of the Brighton Belle, a route frequented by famous personalities like Charlie Chaplin. In 1965, Leona played a significant role in Winston Churchill's funeral cortege, transporting his remains to St. Martins Church. Later, it featured in the 1974 film adaptation of Agatha Christie’s 'Murder on the Orient Express.' After serving as a restaurant in Essex, Leona, along with the 1954 carriage Linda, became part of The Pullman Restaurant at Glenlo, opening in 1998. In 2025, The Pullman underwent a full restoration which has preserved many of the carriages' original details, including the intricate wooden marquetry and the original brass light fittings. At its heart, The Pullman showcases time-honoured traditions in an elevated yet inviting space where food, drink, and atmosphere combine to create a transformative dining experience.

The Craft

At The Pullman, craft is at the heart of our culinary philosophy. Our menu is thoughtfully designed to celebrate the peak of each ingredient, honoring its natural essence. Every dish in our tasting menu is a testament to the integrity of its components. We take pride in using time-honored techniques—such as fermentation, making our own bread, butter, pasta, charcuterie, and chocolates. We also embrace nose-to-tail cooking, ensuring that no part of the ingredient is overlooked. Each element of our offerings is crafted with care, reflecting our dedication to sustainable cooking.

The Produce

We take great pride in collaborating with some of the finest food purveyors from both the region and across Ireland. Through these partnerships, we craft an edible reflection of our strong relationships with local farms, including The Bullaun Ark and Oisin Bia.

How long is the experience?

Please allow 3 hours for your fine dining dinner service.

The seven course Tasting Menu is priced at €130 per person.

Is wine pairing an option to match the menu available?

A wine pairing option is available to compliment the menu priced at €80 per person.

Does The Pullman accommodate dietary requirements?

Due to the nature of our tasting menu and unique offerings, we are unable to cater for all dietary requirements. Please contact the restaurant 48 hours prior to your booking to inform of any special requirements or dietary needs and we will do our utmost to facilitate your requirements.

How do you source and update your vegetarian offerings?

We work with local farmers to source the finest seasonal produce. Our menu is updated regularly in line with the seasons and availability.

Does The Pullman offer vegan dishes?

Dairy is used is all of our dishes and therefore we do not have any dishes for those with a vegan preference.

How can I make a group booking at The Pullman?

Group bookings can be made by calling 091 519600.  For Group bookings of 6 or more guests a 50% deposit of the menu price per person is required at time of booking.

What is The Pullman's policy on dining with children?

Our dining experience is estimated at 3 hours. The environment is very much adult focused dining, however children over 12 years old are welcome to dine with the same menu offering as there is no children’s menu available. Due to the layout of our carriages we are unable to accommodate push chairs or facilitate non dining guests.

What should I know about the reservation time, pre-dinner drinks, and cancellation policy at The Pullman?

Reservation time booked is seating time in the Pullman restaurant. If you would like to have a pre-dinner drink, please feel welcome to soak up the atmosphere in The Ffrench Room & cocktail bar within the hotel. Please allow 30 minutes before your reservation time.

Should your plans change, please let us know 24 hours prior to your booking time to avoid cancellation charges.

  • If the reservation is cancelled withing 24 hours of the reservation start-time. The full price of the menu is charged to the card provided for said reservation.
  • For group bookings over 7 guests, a 50% deposit is required for the total value of the menus provided. If in the event of a cancellation (of the whole group), the remaining 50% is taken from the card provided.
